Thai Crispy Fish Salad

Somewhat similar to the Thai beef salad we make sometimes, but with fish (we used mahi mahi) instead of beef, and no mango. Crispifying the fish makes this salad a little more work. Mint & cilantro help keep the flavor light and lively. We used the bird's eye chili peppers this time--maybe about twice as many as necessary. How do you say caliente in Thai? =)
