Curried Split Pea Soup, adapted by Catherine from this recipe for Coconut Red Lentil Soup. We don't have a pressure cooker, and we didn't have 3-4 hours to wait for the lentils to cook, so Catherine used split peas and de-veganized the recipe by using chicken broth instead of water. It turned out to be one of the tastiest soups ever!
